The Pinnacle Hotel Harbourfront is looking for a Part-Time Chef de Partie with extensive experience in high-volume banquet production to help guide our Culinary team during the busy Festive Season. This part-time seasonal role will report directly to the Executive Chef.

Key Responsibilities:

  • Maintain complete knowledge of and comply with all departmental policies/service procedures/standards.
  • Maintain and strictly abide by Health regulations and Hotel policies & procedures.
  • Meet with Sous Chef/Executive Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.
  • Prepare and assign production and prep work for Line Cooks to complete; review priorities.
  • Ensure consistency in presentation of prepared food items; ensure minimum waste related to food preparation.
  • Upkeep of daily mise-en-place, maintaining perfect condition and consistent par-levels.
  • Encourage potential and apprentice chefs in their work, offering guidance in accordance with culinary standards, recipes and menus of hotel.
  • Additional duties, as assigned.

Qualifications & Experience:

  • Strong background in high volume kitchen, with emphasis on banquet food production.
  • Minimum of 2 years experience in a similar capacity, ideally within an upper-upscale hotel/restaurant environment.
  • Red Seal certification
  • FoodSafe certification

Key Responsibilities:

  • Preparing food items according to recipes and quality standards, including special meals and/or substitute items.
  • Regulating temperature of ovens, broilers, grills, and roasters.
  • Preparing, maintaining and monitoring quality control for hot and cold food items including, but not limited to, meat, fish, fowl, sauces, stocks, sea

Reporting directly to the Front Office Management team, the part-time Night Auditor is responsible for the nightly reconciliation of all hotel postings and successful transition of all systems, programs, and processes to the following day. The Night Auditor also ensures all relevant reports are printed and distributed appropriately.

Key Responsibilities:

  • Completing end-of-day activities, including posting of all charges to correct accounts.
  • Running night audit backup and rolling all systems to the following day.
  • Processing all payments, including all in-house, room, cash, cheque, debit, and credit charges.
  • Processing adjustment vouchers, paid-outs, correction vouchers, and miscellaneous charges.
  • Printing emergency lists and reports.
  • Handling all incoming telephone calls in absence of dedicated Switchboard Operator.
  • Performing all guest arrival and departure duties in an accordance with established Company standards and procedures.
  • Balancing and dropping receipts according to Accounting specifications.

Qualifications & Experience:

  • At least two years of previous experience in a similar capacity within an upper-upscale hotel.

Reservations Manager (Multi-Property)

We are currently recruiting for a Reservations Manager within our centralised Revenue Management team who will be responsible for supporting the Regional Director of Revenue Strategy overseeing three properties within their portfolio. This role provides an opportunity to further develop the discipline of revenue management and grow within our organization. The ideal candidate possesses previous reservations supervisory experience and knowledge of revenue management. Reporting directly to the Regional Director of Revenue Strategy (RDRS), the Reservations Manager role will effectively balance their time between managing and facilitating reservations for three area properties and supporting the revenue management team in day-to-day tasks and projects.

Key Responsibilities:

  • Assist in the optimization of RevPAR; analyzing demand and executing effective selling strategies, oversell strategies, and optimal market mix,.
  • Facilitate and manage the daily activities of the central reservations team, including, training, coaching and motivating.
  • Ensure Reservations, Sales and Front Office team(s) are updated on pricing policies, procedures and promotions/packages.
  • Accurately prepare daily, weekly, & monthly reports.
